"LOST ORCHARD" CIDER AND NEW FALL REDS
This week we're kicking off the tasting with a delicious dry cider from Tilted Shed Ciderworks in Sonoma, CA. Lost Orchard cider is made from heirloom apple varieties sourced from forgotten, neglected, or disappearing orchards, and its flavor and depth will make you glad these orchards were rediscovered! Then for wine lovers we're pouring two reds, one from an exciting young producer in Burgundy, the other sustainably farmed on the slopes of Mt. Etna in Sicily!

--- Lost Orchard Cider evokes the style of Old World ciders, but also has its own distinct character that reflects the essence of Sonoma County's climate and soil, as well as Tilted Shed’s trademark acidity and tannin. This is a blend of several traditional cider and heirloom apple varieties from local "lost orchards" planted decades ago but nearly forgotten since. Bittersweets (high tannin, low acidity) and bittersharps (high tannin, high acidity), including Nehou, Muscat de Bernay, Porter's Perfection, among others, provide structure, acidity, and a long finish. Straw-gold in color, bone dry, and tannic, with rose petal, lemon thyme, dried apple, and marzipan notes, and savory bitterness on a long mineral finish, this cider is incredibly food friendly. Drink it lightly chilled with pork, charcuterie, salmon, and aged cheeses!

Maison Stéphane de Sousa Bourgogne Hautes-Côtes de Beaune AOC Réserve 2011
Country: FRANCE / Region: BURGUNDY / Appellation: BOURGOGNE HAUTES-CÔTES DE BEAUNE AOC / Varietal(s): PINOT NOIR --- In an area like Burgundy, where things change rarely, Stéphane de Sousa is an exciting new presence to watch, already producing some exciting wines at his young domaine. He grew up working in his family’s vineyards in the Côtes d’Or, and after time spent in the medical and biotech field, he returned to the family winemaking business full time. He trained for two years at the viticulture school in Beaune, and then got a year of hands on experience at Domaine Jean-Claude Rateau (the first winery to practice biodynamic farming in Burgundy) before launching his own label with the 2011 vintage out of his grandfather’s cellar. His fruit comes from a combination of vines he purchased, his family’s vines, and his friend’s vineyards, which he share-crops. He works sustainably, plowing to clear weeds and using compost for fertilizer. In the cellar he uses only native yeasts for fermentation and small amounts of new oak so the terroir is never obscured. This wine comes from 50 year old pinot noir vines, and displays beautiful red cherry aromas and flavors, balanced with notes of black currant and raspberry and a lengthy finish. Enjoy this with farmhouse-style herb-roasted chicken for a rustic, yet refined taste of the French countryside.

Tascante Nerello Mascalese Sicilia DOC "Ghiaia Nera" 2012 - ORGANICALLY GROWN
Country: ITALY / Region: SICILY / Appellation: SICILIA DOC / Varietal(s): NERELLO MASCALESE --- Since 1830, Tasca d'Almerita has been a voice of tradition and innovation in winemaking. One of five farms Tasca d’Amerita operates in choice winegrowing areas throughout Sicily, Tascante is located on Mt. Etna, the tallest, most active volcano in Europe. (The name Tascante comes from the combination of Tasca and Etna.) The Etna DOC represents an important part of the winegrowing industry in Sicily, with especially fertile land from the numerous lava flows. It is located within Etna Park, a protected natural area of great biodiversity, and all the grapes are organically grown and sustainably certified. This delicious red comes from nerello mascalese grapes grown on the north slopes of the volcano (the predominant place the grape is found), and is redolent with dark fruit, including blackberry, blueberry, and ripe cherry. Notes of lemon zest, rose stem, green tobacco leaf, and minerals provide intriguing depth and character. Medium-bodied, with firm tannins and a juicy finish, this is delightful with wild mushroom and eggplant casserole, or linguini with tomato and clams!
