Producer Elizabeth Ryan is somewhat of a legend in local apple growing circles, having studied cider making in Somerset and Hereford, England, and Pomology at Cornell University, where she made her first barrel of cider as a student in 1980. Both her farms are committed to ecological growing practices and the resulting highly-flavored fruit is what makes her ciders so unique yet drinkable. The orchards just planted a dedicated hard cider orchard with a number of traditional cider apples including Dabinett, Bedan, Binet Rouge, Kingston Black, Chisel Jersey, Ashmeads Kernel, and others. God Speed the Plough is an unfiltered blend of rare and classic cider apples, sparkling, and semi-dry. This earthy, farmhouse-style cider has much in common with saison-style beers. Well balanced, it pairs easily with many foods, so give it a try with a mezze platter of cheeses and cured meats and celebrate the traditional drink of New York State.

The Humboldt Current carries in tempering sea breezes and mist that offset the latitude’s hot summers, while evening fog, low relative humidity, and clear days allow grape ripening to take place at a slower pace, resulting in full development of aromas and fruity flavors, with balanced sugar and acidity in the wines. This wine is a great example of cool climate pinot: expansive and fruit focused, with juicy, tart red fruit melding with spicy, smoky, floral notes.
