In 1978, Joan Cusiné Hill took over the winery, beginning a family business that’s now in its third generation, with his two grandsons, Joan and Josep Cusiné Carol growing the grapes, and their wives, Maria Elena Jimenez, and Marta Casas as the winemakers and oenologists. Remaining respectful of long standing winemaking traditions, Parés Baltà welcomes innovation as well, with respect for the environment above all. Accordingly, all their vineyards are certified organic. Cultivating their grapes without any herbicides, pesticides, or chemical fertilizers, they employ a flock of sheep to fertilize and weed the vineyards after harvest, as well as hives of bees to assist in pollination. A luscious blend of cabernet sauvignon and grenache, fermented separately before being blended and aged for 7 months in French oak, Mas Petit features notes of red fruit, toast, and vanilla on the nose. This is followed by soft, round fruit flavors intertwined with hints of vanilla seeds, and gentle tannins on the finish. An easy-drinking red that still displays plenty of character, try this with eggplant and mushroom lasagna or burgers.
Domaine de Fenouillet Ventoux AOC 2014 - CERTIFIED ORGANIC

The domaine’s cellars are situated in the village of Beaumes de Venise, in the shadows of Mont Ventoux and the Dentelles de Montmirail. Concern for the environment has always been a priority for the Soard family, and now all of the wines produced at the domaine are certified organic. Grapes for this wine are sourced from two sites; the silex soil around Aubignan and the clay-limestone of Barroux, resulting in a wine full of character and terroir. Bright notes of brambly raspberries meld with dark cherry, blackberry, and plum flavors, accented by hints of crushed herbs, minerals, and earth. Enjoy this with sausage with onions and peppers.
