Country: USA / Region: NEW YORK STATE / Appellation: N/A / Varietal(s): N/A --- Eve's Cidery is a family-owned farm and cidery, a collaboration by Autumn Stoscheck, Ezra Sherman and James Cummins. Located in Van Etten, NY, at the intersection of the southern Finger Lakes and the foothills of the Appalachian mountains, Eve's specializes in growing cider-specific apple varieties that yield dry ciders of balance and structure. Beckhorn Hollow (named for the location of the cidery) showcases many russet varieties of apple to produce a crisp, mouthwatering aperitif that vibrates with equal parts acid, tannin and sparkle. A blend of primarily American-discovered or -bred apple varieties, including Northern Spy, Esopus Spitzenburg, Golden Russet, Idared and Wickson (among others), this embodies the potential of American apples to produce masterful, food-friendly cider. Beguiling aromas range from clover flowers to honey to herbs, before unveiling a crisp, mouthwatering palate of tart citrus, kumquat, toasted hazlenuts and chamomile. Bright acidity and earthy tannins combine effortlessly to provide structure throughout, finishing with lingering tones of honey, citrus and a bit of sweet-bitter candied citrus peel. A fabulous start to the evening, this also makes a fantastic match with citrus-accented foods like ceviche, fish tacos or Moroccan tagine.
