Amyndeon is the coldest part of Greece, and these vineyards lie at an elevation of 700 meters in poor, sandy soil. The grape behind this refreshing cuvée is xinomavro ("acid and black" in Greek), a rare red grape native to Northwestern Greece. Akakies is the final result of two winemaking techniques combined: 90% of the must comes from skin contact and 10% from the “saignée” of grapes fermenting for red wine. After fermentation, the wine is aged on lees for 3 months to soften the natural acidity a bit. Attractive deep strawberry in color, it has intense aromas of wild strawberries, rose petals and violets with touches of lime peel and black olive. Refreshing medium-high acidity, medium body, and a dry finish make this a perfect aperitif for hot summer weather, or a great companion to lemon za'atar-rubbed grilled chicken and tabbouleh.

Varietal(s): CINSAULT --- Jean-Marie Rimbert moved to the Languedoc some 25 years ago, working at another estate until he could save enough to purchase his first parcels of land. The choice was not the noble syrah or even the prosperous grenache, but a patch of old-vine carignan. Now with 20 hectares, Rimbert is gaining fans, wine critics not excepted. He has expanded his grape varieties to include syrah and grenache, but also mourvèdre and the cinsault he uses to craft this cuvée. This organic red is made entirely from cinsault and perfect with a chill, keeping it fresh and quaffable, perfect for summer grilling or sipping by the pool. Fragrant with spice and berry fruit, enjoy this with grilled chicken or quinoa salad with mushrooms and kale.
