Country: ITALY / Region: PIEDMONT / Appellation: COLLI TORTONESI DOC / Varietal(s): TIMORASSO --- The hills of the Colli Tortonesi are located in the easternmost part of Piedmont, and are home to the little-known and seriously underrated timorasso grape, an indigenous Piemontese varietal that produces some outstanding white wines. Among them is this offering from Paolo Carlo Ghislandi of Cascina I Carpini. Cascina I Carpini is situated in the remote town of Pozzol Groppo, nestled amongst the hills on the border between Piedmont and Lombardy. There, on fossilized clay and limestone soils, Paolo produces both white and red wines using all natural methods, paying careful attention to the soil health and biodiversity of his vineyards, fermenting with native yeast, and refraining from filtering. This delectable white is fermented in stainless steel with skin contact for two days, and released one year after harvest. Delicious now, it can also be left to age in the bottle for several years. Timorasso displays enticing aromas and flavors of Golden Delicious apple, creamy apricot, and chamomile, supported on the palate by superb minerality, refreshing acidity, and a subtle nutty finish. This is a great new white for warming weather – fantastic with risotto with wild ramps and spring peas!

Located ten miles northwest of Aix en Provence, high in the clay-limestone soils of the Trévaresse, the 106-acre vineyard is worked using "Integrated Farm Management". This process seeks to respect the natural life of the vineyards as much as possible, through minimum intervention, drip irrigation and other low-impact farming techniques. A classic Provençal rosé, this balances delicate floral notes with bright fruit, fresh acidity and seductive length on the palate. Hints of tropical fruit and fresh lavender make this an irresistible spring sipper! Great in any weather, try this with grilled shrimp marinated in olive oil, lemon and mint, with a side of tabbouleh.
