We're still not quite sure how Thanksgiving snuck up on us so fast, but since it's next week (!) we're thinking turkey and tasty seasonal grain and vegetable dishes, and picking some delicious wines for your holiday meal planning. Not just for Turkey Day however - these wines are equally well suited to any Autumn dinner occasion!

Metal House Cider "Ora d'Oro" Extra Brut Hudson River Valley 2016 - ORGANICALLY GROWN

Country: USA / Region: NEW YORK-HUDSON RIVER VALLEY / Appellation: N/A / Varietal(s): GOLDRUSH+EMPIRE+IDARED+WILD APPLES --- Kimberly, a painter, and Matt, a builder, began Metal House on a urge to do good by the land, and have worked to restore abandoned ancient orchards in the Hudson Valley to their former fruit-bearing glory days. Employing bio-intensive farming techniques, which focuses on the use of naturally made fertilizers and pest management techniques (akin to biodynamics), they focus their work around the idea of sano, which they state on their website, "means healthy and sound, as in the food we eat, the environment we surround ourselves in, and the ideas we support. Complete. This is the orchard from which we want to harvest apples… An orchard free from unnecessary herbicides, fungicides, pesticides and chemical fertilizers allows organisms to work with the trees, improving the flavor and characteristics of the fruit. Beneficial flora have the opportunity to thrive." We're pouring "Ora d'Oro" from the 2016 vintage, made of organic Goldrush from Milton, NY and Empire, Idared, and wild apples from two untreated orchards in Esopus, NY. Made in the Champagne method, the cider spent 12 months on the lees after secondary fermentation, imparting lovely brioche and biscuit aromas to complement the cider's invigorating fruit flavors. The delightfully crisp and dry finish puts this cider on par with the serious sparkling wines of Spain and France.Great with that cheesy potato gratin or corn casserole on your holiday table!

COS Terre Siciliane IGP "Ramí" 2016 - ORGANICALLY GROWN + LOW INTERVENTION + SKIN FERMENTED

Country: ITALY / Region: SICILY / Appellation: TERRE SICILIANE IGP / Varietal(s): INSOLIA+GRECANICO --- Azienda Agricola COS was founded by Giambattista Cilia, Giusto Occhipinti (the grandfather of Arianna Occhipinti, who went on to make a name for herself as a winemaking prodigy) and Cirino Strano. These three friends were inspired to recreate the work of their ancestors, and the acronym (Cilia-Occhipinti-Strano) not only represents the company’s name, but also the beginning of a remarkable partnership. In 1980, the trio became the youngest winemakers in Italy when they bought Joseph Cilia’s old family winery, located in the historic town of Bastonaca. Today, the remarkable impact they have had on the region of Cerasuolo di Vittoria continues. "Rami" is equal parts inzolia and grecanico fermented on their skins in concrete tanks, yielding a beautiful late afternoon-orange color and aromas of orange blossom, apple cider, and raw almonds. Delicate notes of jasmine and green tea pop up through a chewy texture and cidery tartness, developing fleshy apricot and peach flavors with exposure to air, before hints of honey and chamomile close the show. Perfect for those looking to go off the beaten track for those holiday dinner pairings, this can stand up to roast turkey and all those rich sides!

COS Cerasuolo di Vittoria DOCG Classico 2015 - ORGANICALLY GROWN + LOW INTERVENTION

Country: ITALY / Region: SICILY / Appellation: CERASUOLO DI VITTORIA DOCG / Varietal(s): NERO D'AVOLA+FRAPPATO --- Another fantastic offering from cult winery COS, Cerasuolo di Vittoria is a blend of organically grown nero d'Avola and frappato. Derived from grapes grown on ancient soils with clay and calcareous tufa, this wine ferments with natural yeasts, and both vinifies and ages in cement tanks to retain its unique terroir. Nero gives the backbone to the blend and frappato offers the aromatic floral lift combined with crisp acidity. Layers upon layers of blue and red berries are joined by peppery spices, incense, rose petals, and warm tobacco leaf in a complex, sinuous package. Vibrant and powerful, its fresh acidity, chewy tannins, and savory mineral finish make it a perfect complement to food. Think roast venison, lamb, goat, or mature hard cheeses.

Château Grand Corbin-Despagne Saint-Emilion Grand Cru AOC 2008

Country: FRANCE / Region: BORDEAUX / Appellation: SAINT-EMILION GRAND CRU AOC / Varietal(s): MERLOT+CABERNET FRANC+CABERNET SAUVIGNON --- The Despagne family has been making wine in Saint-Emilion for seven generations - over 200 years! Enologist François Despagne took the reins in 1996, and his passion and experience have made his family estate – a Grand Cru since the original classification in 1955 – a longstanding star of the region. Château Grand Corbin-Despagne is a 30-hectare vineyard situated on a mix of clay and sandstone soils close to the border with Pomerol. François has painstakingly analyzed the vineyards and identified 53 individual plots, and he now adapts his viticulture to suit the needs of each parcel. Vines range in age from 40 to 95 years. No herbicides, pesticides, or artificial fertilizers are used, and cultivation is essentially organic. Grapes are hand picked and vinified in 27 separate stainless-steel and cement tanks. The blend is 75% merlot, 24% cabernet franc and 1% cabernet sauvignon, and the wine is aged for 18 months in oak, around 35 to 50% of which is new. François aspires to make wine with freshness, elegance and richness that ages well for between six and 20 years. (Older vintages such as 1943 and 1961 show the vineyards’ considerable quality at achieving this.) This, the 2008 vintage, is in prime drinking form, with polish and elegance to spare. Perfumed plum and deep, dark cherry flavors dance around licorice, wet earth, forest floor, and leather notes. Luxuriously velvety in texture, this finishes with gently integrated tannins, just begging to be paired with dishes such as wild mushroom and barley stuffing!
