Although he was born and educated in Burgundy where pinot noir and chardonnay reign supreme, Damidot found his way to Provence, where he is making drinkworthy pink. This is classically-styled rosé from Bandol, the winegrowing region just east of Marseille, which is known for its warm maritime climate perfect for ripening the thick-skinned mourvèdre variety. The grapes yield a wine with a deep salmon hue and lovely brightness, acidity and length with fresh raspberry, just-ripe strawberry and purple flowers on the palate. Wash down your crusty baguette sandwich (prosciutto and dill havarti for me) or sip alongside a lovely Saturday night salad Niçoise.
Domaine Ledogar "Maccabeu" Aude IGP 2015 - BIODYNAMICALLY GROWN + LOW INTERVENTION

Their arduous work in the vineyards begins and ends with a commitment to biodynamic farming principles. Biodynamics provide a framework for energy balance in the vineyard, where the health of the soils and vines are directly related to both the climate and celestial bodies. Attention to vine and grape health is their number one concern and this shows in the bottle. "Maccabeu" is made from 100% macabeu grapes grown in the esteemed Corbières Boutenac cru, where the warm, dry Mediterranean climate is ideal for organic and biodynamic vineyard management. The brothers practice low-intervention winemaking, so this bottle sees no fining, filtration, and only a discreet dose of S02 before bottling. The macabeu comes from two different plots and is picked early to retain freshness and acidity. Pear-skin, yellow apple and white flower aromatics flow softly out of the glass and a distinct mineral core makes itself present on the palate. Perfect aperitif wine, or beautiful with a roasted eggplant salad with crushed chickpeas and herb yogurt.
