Sébastien Chatillon, aka Ad Vinum, is one of the organizers of the Bim Natural Wine Festival held in the Gard every summer. Hailing from Normandy, Sébastien barely made it through four months of university before deciding it was not what he wanted from life, and after a meandering trajectory working in stables, selling candy, and playing in rock bands, he discovered his true calling in natural wine. He moved to the Loire Valley and worked with René Mosse in Anjou for four years, which proved to be an eye opener for Sébastien: "It was fresh, different, and in the morning I had no headache. A dream for a guy like me." In 2016, after seven years spent as head sommelier of Le Châteaubriand in Paris, Sébastien moved to Vallabrix in the Gard and started Ad Vinum. “Bim” is slang for “word”/“dope”/“bet”, and this wine was created to commemorate the natural wine festival. A blend of grenache, cinsault, and mourvèdre, the fruit is grown in the Gard and fermented with native yeasts before bottling without fining or filtration. This limited production cuvée is the perfect “gateway wine” for those looking to dip a toe in the natural wine scene! Fresh and a bit funky, it invites you back for sip after sip of crunchy, juicy fun! Organically grown, low intervention, vegan.
