André Heucq has been farming as naturally as possible since taking over his family’s vineyards in 1973. He and his family plow the vineyards with a horse, foster ground cover plants, and use only natural fertilizers. André’s daughter, Fanny, is now involved in maintaining their Vallée de la Marne estate, where pinot meunier dominates. Their ‘Cuvée Oeuf’, made entirely of meunier, takes its name from the use of clay and concrete egg-shaped vessels for fermentation and two years of aging. At disgorgement, it receives zero dosage. Time spent in those eggs lends the wine a unique texture, at once hazelnut grove and seaside mist. Combine that with floral aromatics and the richness of pastry cream, and you have one delicious, bubbly mouthful. Organically grown, biodynamically grown.
