In 2008, Marc and Anne Pichon bought Domaine le Murmurium in the Côte de Ventoux village of Mormoiron. Made up of 15 hectares of old vineyards on prime terroir adjacent to Château Pesquie, Murmurium comes from the Latin phrase "The Buzzing Song of Bees", and all the vineyards are cultivated through 100% organic practices without any chemicals or pesticides and by hand tilling the soil. All harvesting is also by hand, and the grapes are completely destemmed. Fermentation takes place with indigenous yeasts in cement tanks, where the wine is aged for 6 months before bottling without fining or filtration. Although tragically no longer with us, Marc Pichon has said that his inspiration behind "Sauvage" is to produce a fresh, accessible, pure style of wine, made with respect to nature. Today Anne continues that tradition, producing no more than 40 barrels of wine for importer T. Edward, along with her sister-in-law Véronique. This grenache is a perfect companion for chilly weather: rich, spicy, and concentrated. Bursting with notes of violets, kirsch, blueberry, cracked pepper, and, fittingly, wild herbs (known as sauvage), this is capable of sitting alongside strong cheeses and roasted or braised dishes as well.
