Au Bon Climat, and winemaker Jim Clendenen, have earned an enduring reputation for top-quality chardonnay and pinot noir since 1982. This is voluptuous, mouth-filling pinot noir worth savoring. Red and black berries mix with baking spices on the nose, followed by freshness, structure, and oak influence in balance. Perfect for pairing with hearty meat dishes. After having aged five years or so, it will display added complexity and subtlety in the bouquet and on the palate. At that point (assuming you still have it around then), the producer recommends a pairing of salmon or tomato-based sauces. Organically grown.
