Winemaking couple Tony Bainbridge and Julie Cathcart moved to the Loire valley with a dream of producing natural wines. After a few years of honing their craft in others’ vineyards, Bainbridge (originally from Britain) and Cathcart (American) eventually bought their own 4.5-hectare plot in Chavagnes-les-Eaux, south of Angers. There they focus on grapes particularly suited to their location in Anjou, including the cabernet franc featured here. After whole-bunch semi-carbonic maceration (a process that involves carbonic maceration in a sealed tank first, followed by a stage of alcoholic maceration), this, like all of their wines, is bottled in clear glass with metal crown caps instead of corks. With a very slight fizz on opening, this cab franc combines freshness and a fragrant bouquet with just the right amount of spice and earth. Certified organic, low-intervention/natural wine, vegan.
