Batič is a Slovenian winery that was founded in 1592, with current owners Ivan Batič and his son Miha making wine based on over 400 years of family experience and a firm belief in the power of biodynamics. They use many traditional methods, including extended maceration at uncontrolled temperatures, indigenous yeast fermentation, and aging in local Slovenian oak. Timing of processes in the vineyard and winery are determined by the phases of the moon, a key element of biodynamic winemaking. They own 19 hectares of vineyards in three villages (Šempas, Vogrsko, and Vitovlje) ranging from 60 meters up to 1495 meters above sea level - all Western facing. Cuvée “Zaria” comes from the interplanted Zaria Vineyard, planted to varieties like pinela, zelen, rebula, vitovska, klarnica, rumeni muškat, and chardonnay, all of which go into this wine. The grapes are crushed and co-fermented on the skins in open-top fermenters. Aged in Slovenian oak and bottled unfined and unfiltered without any sulfur additions, this wine is the singular expression of this place on earth. Aromas and textures are both wild and commanding. As a testament to the ancient winemaking traditions in Slovenia’s Vipava Valley, this is a bottle with no flavor analog among modern wines. Biodynamically grown, low-intervention/natural wine, vegan.
