Adrien Dhondt is a rising star in the Champagne firmament of the Côte des Blancs. Though still young, he has been at the helm of his family’s estate since 2010. He pivoted early in the direction of biodynamic farming practices but has not pursued official certification. His “Dans un premier temps” assemblage represents the three villages where Adrien manages vineyards. It incorporates 50% chardonnay from Sezanne, 30% pinot noir from Avenay Val d'Or and 20% old vine pinot meunier from Cuis. The 2017 vintage makes up 70% of the blend with the remainder coming from a perpetual reserve going back to the estate’s founding in 1986. Average age of the vines is 45 years. This batch was bottled in May 2018 and disgorged in November 2020 with a dosage of 3 g/L. Deliciously aromatic of quince paste and crisp green apple, it’s deliciously creamy on the palate and finishes long with a hint of citrus pith.
