‘L.P.M’ is short for La Petite Montagne, north of Reims, where Maxime Ullens grows a single plot of pinot meunier for this wine. Fermented and rested on the lees for 11 months in oak barrels, it ages in bottles for an additional 18 months. It undergoes no fining or filtration and receives only 2.8 g/l of dosage. Light gold in the glass, it exudes lemon oil and lemon zest on the nose, over toasty brioche and minerals. Its silky texture complements fine, persistent bubbles and gentle acidity. On the palate, expect honeysuckle, mirabelle plum, and red apple.
