Leif Sundström founded Sundström Cider after nearly 10 years of working in the wine industry. His aspirations to pursue cider really took hold during his final wine position, at Weingut Leitz in Rüdesheim, Germany. Upon returning to the US, Leif moved to the Hudson Valley to do just that; his amazing ciders rely on a combination of select wild harvest apples, heirlooms, cider apple varieties and several species of crab apples to make vinous, age-able ciders that speak of place. A blend of 40% Northern Spy and 60% Rhode Island Greening apples from Abendroth Orchard in western New York, this vintage of Cider/Cider is a “Sauer” version- a hat tip to traditional Spanish Sidra. Fermentation took place in stainless tank with native yeasts, before the cider was aged on its lees for six months before bottling unfiltered and unfined. The cider was then re-fermented in the bottle resulting in a lightly sparkling, lightly sour cider with a faint edge of funk that’s perfect as an aperitif or pairing with food. Low intervention.
