The orchards of the Cidrerie du Léguer occupy a gentle slope leading down to the Léguer estuary, on the north coast of Brittany. When Cédric Le Bloas and his wife purchased the farm in 2016, the trees had already been managed organically. They continue in that vein, with little tending other than mowing the grass and a bit of pruning. The apples and pears ripen until they fall, at which point Cédric and his team gather the fruit into crates for further ripening. They follow the slow, old-fashioned process of “keeving” to settle the must and produce off-dry ciders using spontaneous fermentation and without added sulphur. This beautiful pear cider comes from just two trees down the road from the cidery. Bright but textural and naturally carbonated, it unfolds with delicate fruit and a delightful zing. Organically grown.
