Fabio di Donato is dedicated to the safeguarding and promotion of rare grape varieties indigenous to the microregion of Cugnoli, in Abruzzo. He farms his four hectares organically and practices minimal-intervention winemaking. The hand-harvested vines of cococciola for this cuvée come from clay soils rich in fossils. It is bottled unfiltered with a minimal addition of sulfur. Though the variety may be obscure, this crisp white comes across as friendly and accessible: its bright, clean, and crowd-pleasing flavors will make you wonder why we don’t hear about cococciola more often. Though light in body, it has a texture reminiscent of chenin blanc, with green apple crunch on the palate and a minerally, lemon-peel finish. Organically grown, vegan.
