Clear Creek Distillery was founded in 1985 with a vision to use the bountiful fruits of the Pacific Northwest to create fruit-based spirits that rivaled the best of their European counterparts. Using old-world techniques and sourcing ingredients from the local orchards and fresh water springs of Mount Hood in the Oregon countryside, Clear Creek became one of the first craft distilleries in the United States. Clear Creek’s fruit brandies and liqueurs are distilled in small batches using traditional copper pot stills (It takes 20lbs of pears to create just one bottle of the flagship pear brandy!). The cassis is an intensely tart, lightly sweet, slightly earthy liqueur with huge cabernet-esq fruit flavor. Blackcurrants come from a farm less than half an hour from the distillery. They arrive at the distillery and are immediately dumped into their clear, un-aged brandy. After months of maceration, the solids are pressed off, and some sugar is added for balance. This is essential to the Kir and Kir Royale cocktails, but also fun to experiment with in an El Dorado (tequila, lime juice, cassis, and ginger beer).
