Clear Creek Distillery was founded in 1985 with a vision to use the bountiful fruits of the Pacific Northwest to create fruit-based spirits that rivaled the best of their European counterparts. Using old-world techniques and sourcing ingredients from the local orchards and fresh water springs of Mount Hood in the Oregon countryside, Clear Creek became one of the first craft distilleries in the United States. Clear Creek’s fruit brandies and liqueurs are distilled in small batches using traditional copper pot stills (It takes 20lbs of pears to create just one bottle of the flagship pear brandy!). For the Cherry Brandy, or Kirschwasser, fresh dark and sweet table cherries from Oregon and Washington cherries are crushed then fermented, and distilled. An integral ingredient in Swiss fondue, Black Forest cake and tortes, this is also delicious to sip as a digestif. Also try combining with bourbon, Luxardo Maraschino cherry Liqueur, and orange bitters for a classic Hunter Cocktail.
