Owned by the Roux family since 1797, the property of Clos Cibonne saw its winery modernized in 1930 by André Roux, who hoped to showcase his estate’s rosés. André replaced all of the estate’s mourvèdre with the native grape varietal tibouren, which he believed to be the ideal grape for the region. Brigitte Roux (André’s granddaughter) took over in the ‘90s, and along with her husband, Claude Deforges, and 5th generation winemaker Olivier Deforges, brought Clos Cibonne back to its standing as one of the 18 Cru Classés in Côtes de Provence. Nowadays, Clos Cibonne is highly esteemed for producing distinctive rosé wines with earthy notes that capture the essence of Provence. 

This special bottling is 100% tibouren from 60+ year old organic vines in slate-clay soils. The Le Pradet vineyard is one of 18 Crus Classés of Côtes de Provence, situated in the foothills of the Maures mountains overlooking Toulon’s harbor. This microclimate provides essential cooling breezes in the summer, necessary for the health of the organically-farmed vineyards as well as for maintaining freshness in the wines. After harvest, grapes are destemmed and directly pressed, then fermented with indigenous yeasts in temperature-controlled stainless steel tanks. Wines are then racked into 120-year-old 5000L foudres, where they are aged on the lees for one year under a thin veil of yeast known as fleurette (a similar process to how many Jura wines and Sherries are aged). Clos Cibonne combines the rare tibouren grape with this unique aging process to produce a truly remarkable bottling, famed for its impressive texture, depth, and ageability. This cuvée is vibrant, with a wildly complex bouquet of candied orange peel, fleshy papaya, apricot, earth, and spice. Hints of smoked tea leaf, pink peppercorn, and umami overtones mingle on a meaty, savory frame, with a delightfully lingering finish. Organically grown, low-intervention/natural wine, vegan.
