In 2012 Joseph Bennett formulated a small line of bitters which found popularity at several bars in his then-hometown of Seattle. After Joseph moved to New York, he and his wife, Yana, revamped the recipes and methodology they used to blend botanicals, relaunching their bitters in New York in 2018. Their philosophy combines a focus on health and wellness with bold, unforgettable flavors. Unrelenting heat, inspired by the unforgiving beauty of the desert: Scorpion Bitters utilize both Trinidad Moruga scorpion chili as well as dried Manchurian scorpions for levels of heat on the palate that conjure images Dante would be proud of. Very spicy (we warned you!), this bitter remains clean and complex, with the (actual) scorpions adding savory umami undertones to balance the heat. Try this with mezcal drinks - if you dare!
