Domaine de Pajot is located in Gascony, on an eastern hillside overlooking the Eauze, the capital of Armagnac (home of the eponymous brandy.) Now run by third generation winemaker Damian Barreau, Domaine de Pajot has been committed to organic agriculture since 2001. “Les 4 Cépages” (“Four Grapes”), as its name suggests, is a dry blend of the four primary white grape varietals of Gascogny: colombard, sauvignon blanc, ugni blanc, and gros manseng. All four are blended here to take advantage of their complementary qualities, but they’re also grown together, in a tiered vineyard arrangement that minimizes exposure to diseases and climate risks. Staggered harvesting allows for more precise winemaking, and the proportions of each grape vary from year to year in order to produce the best balance of aromas and flavors. Inviting scents of citrus, boxwood, and tropical fruits translate into crisp fruit on the palate. Pale yellow in color, and wonderfully fresh in the mouth, with an aromatic finish, this makes a great aperitif, or pairs well with soft cheeses, or light seafood fare.
