COZs is a project of Tiago Teles and Antonio Marques da Cruz, carrying on the tradition and vineyards of the late winemaker José Mendoça. This “Pop” release comes from just two acres of 40-year-old vines, planted in chalky clay soils within the Serra de Montejunto Protected Landscape, north of Lisbon. It features a grape variety, vital, that grows almost exclusively in the coastal regions of Portugal. Here is a chance to experience the uniqueness of a lesser-known grape; four days of maceration with the skins brings out the particular flavors and texture of this native Portuguese variety. After spontaneous fermentation in cement tanks, it is bottled without fining, filtration, or added sulfites. With fresh golden apple and apricot on the nose, it presents texture on the palate while remaining crisp. The spicy finish would pair especially well with a salty cheese, with grilled shrimp or, of course, bacalhau.
