Cornelius Simonsen, Jakob Paludan & Martin Pedersen of Decideret specialize in wild-fermented ciders. Based in Copenhagen, they gather surplus garden apples and organic orchard fruit from around Denmark for their creations. In this case, they decided to take a dry, sour cider a step further, in collaboration with Danish beermakers To Øl, by adding Mosaic, Simcoe, and Mandarina Bavaria hops. Secondary fermentation took place in the bottles, which were subsequently disgorged by hand. Citrus and elderflower aromas get carried along on a tide of fine bubbles. Apples grown organically, no sulfur added.
