The Domaine Louis Boillot makes old-school Burgundy from very old vines. Their vineyard sites in Volnay come down to Clément, Louis’s son and current winemaker, from four generations back. Though the domaine has subsequently branched out to other villages in the Côte d’Or, and more recently Beaujolais, Volnay is where they started. This particular cuvée comes from the lieu-dit “Les Grands Poisots,” a relatively cool plot of primarily clay soils that sits right on the border between the village zones of Volnay and Pommard. The vineyard’s 60-year-old vines produce grapes with a density of flavor that Clément does not mask with overt oak influence. Using large foudres of neutral oak allows ripe red and black fruit to shine and to mix in complex ways with hints of evergreen and spice. Sustainably grown.
