Dynamic young winemaker Romaric Chavy descends from two families with deep roots in Burgundy. It is really since Romaric took over the management of the family vineyards and cellars in 2014, however, that the reputation of the domain’s wines have soared. He farms organically and makes as few interventions in the winemaking process as possible: eschewing bâtonnage and fining, with minimal filtration. Romaric’s vineyards in Puligny-Montrachet lie within the climat known as “Les Enseignères,” which shares favorable geologic aspects with the famous Bâtard-Montrachet and Bienvenues-Bâtard-Montrachet Grand Cru sites nearby. This 2018 chardonnay aged for 12 months in barrel (20% new). The nose is nutty, floral, elegant, and complex. The slightly savory palate grounds pear and apple flavors; the finish is very expressive, with nutmeg, allspice, and lemon that unfolds for a unique third act. This is a burgundy to savor and contemplate. Organically grown, vegan.
