Established in 1770, the Binner estate is among the environmentally conscious producers in Alsace that strive to push the technical limits of winemaking while remaining respectful of the nature that surrounds them. Winemaker Christian Binner vinifies without any added sulfur, even at bottling, and uses native yeast for fermentation. The quality of his wines has cemented a reputation as one of the most renowned natural winemakers in Alsace. In 2012, he added a winery space built into the earth with a soil roof for natural temperature control which he says has greatly improved the quality of his wines, adding stability and resilience while still forgoing the use of sulfur, which is rather difficult to achieve with white wines. This splendid dessert wine comes from pinot noir grapes affected by the botrytis fungus (noble rot), which concentrates and intensifies the flavors of dried fruit, caramel and honey. Grapes are carefully sorted before pressing, and the wine spends two years in old barrels, allowing the wine to become self-stabilizing over time. Luxurious layers of apricot, toasted walnuts, candied fruit, dried flowers, and a lovely honey note on the finish make this an opulent after-dinner sip and exquisite pair with fruit desserts. Enjoy at 55°F and share with friends. To our knowledge, in the past decade, this wine has only been made in the 2009, 2011, and 2015 vintages, so it’s truly a work of Mother Nature.
