Domaine de la Borde is a tiny estate in the Arbois-Pupullin appellation of the Jura, run by young vigneron Julien Mareschal. Like many winemakers of his generation, Julien was not born into a vine-owning family, but instead came to the Jura at age 23 after studying agronomy and oenology in Dijon. His five hectares of vines are planted in and around Pupillin, including some at the highest elevations (around 550 meters), and vines average more than 30 years in age. The estate is entirely organic and in the process of converting to biodynamic viticulture as well. This cuvée is 100% ploussard (also known as poulsard), grown on deep red marl soils. Harvesting is done by hand and only indigenous yeasts are used for fermentation. The wine is aged in stainless steel for 10 months, then bottled without the addition of sulfur. Light garnet in color, it unveils beautiful aromas of rose petals, wild raspberry, red currant, and cranberry. It is delicate and lively on the palate, offering generous amounts of red berries and notes of red apple skin, crushed flowers, and a hint of pink peppercorn.
