Domaine de la Charité was founded by the Coste family in 1964 in Saze, just west of Avignon, and is now run by grandson, Christophe. Christophe established himself as a winemaking prodigy early on, with his 1999 vintage earning him a “Coup de Coeur” in the Guide Hachette - just two years after earning his degree in oenology! The estate is now certified organic (Ecocert). Christophe was the first winemaker in the Rhône to pioneer the use of a sorting machine which separates grapes according to potential alcohol content, allowing him to ferment grapes of lower sugar in a separate tank from those of higher sugar (and potential alcohol %), adjusting the maceration time accordingly for each batch. Fermentation occurs in horizontally mounted stainless steel tanks which rotate gently on a central axis, ensuring the skins are mixed evenly throughout the fermentation process. This full-bodied viognier is rich and mouth filling. Layers of apricot preserves, honeysuckle, and honeycomb lead into an unctuous texture on the palate, where hints of buttercream mingle with a dash of anise and baking spice. Certified organic, vegan.
