The sweet wines from the Rivesaltes AOC are classified by color (tuilé, ambré, grenat, or rosé) and are generally made from varieties of grenache: blanc, gris, and noir, though the ambré Rivesaltes from Domaine de Rancy is made with 100% macabeu. Because these fortified wines are fully oxidized, they have a very long shelf life. This 2001 vintage spent 12 years in the barrel before bottling, but it has quite a bit of life left. Even after opening the bottle, it can last almost indefinitely. Balanced and elegant, it loves to be served chilled, either by itself or with dessert. We’re tasting toffee, toasted hazelnut, and candied plum, with a hint of sea salt caramel. YUM! Organically grown, low-intervention/natural wine.
