Thibauld and Jennifer Denizot create excellent expressions of the unique terroirs of the Sancerre area. Based in the village of Verdigny, with family holdings that date to the 18th century, the Denizot domaine is known for their stellar single-vineyard releases from the well-known lieux-dits of the Côte de l’épée and Les Bouffants, representing the two ends of the Sancerre spectrum: one site yields lean and precise wines and the other produces more textural whites. The soil of both of those vineyards are predominated by caillottes (limestone pebbles), as are the vineyards of Amigny, Chavignol, Sancerre, and Verdigny from which this, their entry-level cuvée, is drawn. All of the sourcing vineyards are organically farmed. The combined harvest fermented and aged for ten months in a combination of stainless steel (70%) and concrete (30%). The limestone soils impart a lasting minerality, topped with luscious white peach and citrus. After a couple of years in the bottle, this 2019 vintage has mellowed beautifully, with softened acidity and gentle texture. Organically grown.
