Domaine Pastou is situated in the small commune of Sury-en-Vaux, a sleepy town in the rolling hills of the north of the Sancerre appellation. Jean-Marc Pastou has been making wine since the early 1980s, when he planted his first vines, still in production today. The sauvignon blanc grapes for this wine come mainly from the lieu dit of ‘Les Boucaults’, hence the name of this bottling. The grapes are sustainably grown in soils that are a mix of sand, “caillottes” (small chalky stones) and flint; they are hand-harvested and fermented with indigenous yeast in stainless steel tanks. The wine is aged in tank on fine lees and bottled unfined and unfiltered. This Sancerre is a classic example of what one would expect from the region: super bright, crisp, and mineral-driven with fresh citrus flavors, more citrus and flowers on the nose, and a touch of lees on the finish.
