The Riestch family has been in Mittelbergheim in Alsace since the 17th century, but the Domaine was founded in 1970 by Pierre and Doris Riestch. It is currently run by their son Jean-Pierre and his wife Sophie. They converted the entire estate to organic viticulture in 2008 and have allowed native flora and fauna to create a balanced environment and promote the expression of terroir. They follow low-intervention practices in the winery, filtering but not fining their wines. Very low doses of sulfur are used only if absolutely necessary. The ‘Quand le Chat N’est Pas’ is 100% pinot gris that is macerated whole cluster for two weeks and fermented with indigenous yeasts and then aged for seven months in tuns. It has a beautiful red color that results from the skin contact of pinot gris, with aromas of bright cherry, kirsch, and almond. On the palate, it’s light with tension and balanced acidity with red fruit character and streaks of pepper and fine tannin. Organically grown, low-intervention/natural wine, vegan.
