El Velo (“The Veil”) takes its name from the veil of ash that covered Tequila Valley when the Volcan de Tequila erupted 200,000 years ago. This layer of volcanic lava lends Lowland tequila its distinctive earthy, spicy, herbal character (whereas Highland tequila has a fruitier profile.) El Velo is made from agave that is harvested at full maturity (a minimum of 6 years old), roasted in traditional brick ovens for 32 hours, then rested for 16 hours. The agave is fermented with wild yeasts in stainless steel vats and double distilled in copper-lined stainless steel pot stills before bottling. At 44.5% proof, a tad higher than many tequilas, this provides the perfect backbone to agave-based cocktails. Warm notes of agave, fresh-cut grass, and green tea are joined by hints of citrus oils and pine resin. The finish brings forth subtle layers of fleshy stone fruit and a flourish of cracked black pepper.
