Éric Rodez cares not only about the soil that produces his Ambonnay Grand Cru Champagnes; he also cares about the town—to the point that he has even served as the mayor of Ambonnay. A true master of his craft, Rodez carefully blends from across his cellar to create his distinctive line of Champagnes. He draws exclusively from his own Grand Cru vineyards, all farmed using organic and biodynamic practices. Instead of chemical sprays, he uses essential oils (such as citrus, eucalyptus, and thyme) to prevent mildew. This Cuvée des Crayères (referring to the traditional chalk cellars of the Champagne region) is made of 60% pinot noir, 40% chardonnay, blended from several vintages. Up to 25% of the wine is aged in small oak barrels. Upon opening, a warm biscuit aroma greets the nose. Lemon-lime flavors persist on the tongue, followed by a long, mineral, slightly salty finish. Further depths of toasted brioche flavor develop after a few minutes of air. Organically grown.
