Evolúció wines come from vineyards on both sides of the border between Austria and Hungary. The blaüfrankisch comes from Austria’s Burgenland, while this white is from the Tokaj region of northern Hungary. Tokaj is the most famous Hungarian wine region, best known for the sweet golden wine Tokaji Aszú, which has had rabid devotees since the 1700s, including Peter the Great and Louis XIV. The region is named after the village of Tokaj, and encompasses 28 towns perched along the rolling hills between the Tisza and Bodrog rivers. Tokaj producers have recently (only within the last 15 years!) begun making their native white grape, furmint, in a dry style. When fermented to dryness, furmint displays a racy acidity and distinctive mineral structure around its signature orchard fruit notes. Evolúció’s furmint provides a very expressive nose of spiced apple and exotic blossoms. Notes of Golden Delicious apple and spiced chutney on the palate are backed by crisp acidity before finishing dry and clean.
