Fabien Jouves studied to be a doctor but ended up a winemaker instead, when he took over the management of the family domaine in the early 2000s. Situated at the highest elevations of the Cahors appellation, the home of malbec in southwest France, the Jouves estate benefits from limestone-based soils and cool nighttime temperatures. In his own estate vineyards, Fabien practices biodynamic farming methods, and all of his wines are fermented with indigenous yeasts and treated with a light, non-interventionist touch. This blend of gros manseng, ugni blanc, and muscat d’Alexandrie from organically-farmed vineyards macerates on the skins for three months in steel tanks before aging for six months in a combination of tanks, barriques, and foudres. Tropical fruit unfolds over a firm tannic foundation. Organically grown, low-intervention/natural wine, vegan.
