It is true that Josep Ma and Rebeca Rosell Gracia grow grape varieties unique to their corner of Catalonia, though the couple also maintains a vegetable garden as well as almond and olive trees for their own consumption. Their project involves the sustainable use of the whole ecosystem. That holistic sensibility informs the naming of their wines: in addition to this red ‘Cervell’ (Catalan for brain), they also make a white ‘Ma’ (hand) and sparkling ‘Pulmo’ (lungs). This light wine, bright ruby in the glass, combines a native aromatic white variety, malvasía de Sitges, with two red varieties: samsó (related to carignan) and sumoll. The white macerated on the skins for 24 hours before fermentation, while the reds fermented together carbonically. After blending, the complete wine rested in steel and glass vessels for three months before being bottled without fining, filtering, or any addition of sulfur. Fresh and exciting, it bursts with pomegranate and flowers up front, finishing with a squeeze of ruby red grapefruit. Low-intervention/natural wine.
