Folias de Baco was started in 2007 by young, innovative winemaker, Tiago Sampaio, who was inspired by his grandfather’s vineyard work. He has a vivacious curiosity and loves to experiment at every step of the winemaking/growing processes. He has studied agricultural engineering and has a PhD in Viticulture and Enology from Oregon State University, where he picked up on modern philosophies and aesthetics of winemaking, never forgetting his Douro roots. Folias de Baco is in the Alto Douro, in the sub-region of Cima-Corgo where the land is very tough and challenging at a higher altitude, but it is an expression of traditional melding with modern techniques. The ‘Uivo Renegado’ is a field blend from 80-year-old vines planted in soils spattered with schist and granite. The 25+ varietals are hand harvested and fermented whole-cluster, followed by fermentation with wild yeasts in large (1000L) granite lagars. It spends 6 months on its lees with battonage every two weeks at the beginning of its 6-month aging, with 15% of it in 2-3 year old chestnut oak and the rest in the cement, before it is bottled unfined and unfiltered. The wine is young, bright, and full of red cherry and strawberry fruit with mouthwatering acidity and a smooth finish. Organically grown, low-intervention/natural wine, vegan.
