The cellar of François Chidaine is second-generation family-owned, located in Montlouis-sur-Loire, the center of the Loire Valley’s Touraine region, named for its proximity to the historic city of Tours. Long revered in the Loire for his Montlouis and Vouvray wines, Chidaine began producing sauvignon blanc a few years ago with the same impeccable growing and winemaking techniques. The fruit for this cuvée comes principally from the domaine's vines in Chissay-en-Touraine and Saint-Julien-de-Chédon, less than 10km from Montlouis. Augmented by some fruit sourced from neighboring sites, Chidaine is proud to maintain that even those locations not owned by the domaine are still managed by his team and entirely hand-harvested. Made from biodynamically grown grapes from flinty-clay-limestone soils that are whole-cluster pressed into stainless steel, the wine is then fermented with wild yeast and aged on its lees until bottling. Sumptuous aromas of juicy citrus, white flowers, and crushed stone are joined on the palate by tart apple flavors as well, with a delightfully herbaceous (but not grassy character) overall. The depth of flavor and complexity here are the hallmarks of this highly esteemed grower, and make this an impressive value as well. Biodynamically grown, vegan.
