As a former forester, Frantz Saumon knows how important it is to think holistically about ecosystems. From the start of his career as a winemaker twenty years ago, he has prioritized organic and biodynamic farming methods and natural winemaking processes. He uses only indigenous yeasts, makes all of his sparkling wines as pétillant naturel (pet-nat), and uses minimal amounts of sulfur. Frantz’s domaine plantings are almost entirely focused on chenin blanc, though this cuvee comes from sourced fruit farmed organically. The juice is fermented in a combination of stainless steel, demi muid and used barrique. This is a clean and energetic chenin, moderately aromatic with a depth of citrus fruit flavors and green apple skin. Organically grown, low-intervention/natural wine, vegan.
