Brothers Pascal and Didier Picq are carrying on the legacy of their father, Gilbert, together producing consistently excellent Chablis from both premier cru and villages-level vineyards. Pascal manages the vines, while Didier does the winemaking. Using only stainless steel—no oak—and allowing their wines extended lees aging, Didier takes the time necessary to craft classic Chablis with texture and energy. This cuvée comes from hillside vineyards in the village of Chichée (to the southeast of Chablis), with soils of clay and limestone. Harvested by hand and fermented with indigenous yeasts in stainless steel, all of Picq’s parcels render deliciously concentrated flavor and structure. Fresh and chalky on the nose, this bright chardonnay opens up with crisp apple and citrus notes on the palate. Sustainably grown.
