Brothers Pascal and Didier Picq are carrying on the legacy of their father Gilbert, together producing consistently excellent Chablis from both premier cru and villages-level vineyards. Pascal manages the vines, while Didier does the winemaking. Using only stainless steel—no oak—and allowing their wines extended lees aging, Didier takes the time necessary to craft classic Chablis with texture and energy. This cuvée comes from two southwest-facing lieux-dits, Semon and Paradis, with soils of clay and limestone. Harvested by hand earlier than other Picq parcels, these vineyards render concentrated flavor, structure, and brightness comparable to a premier cru. Fresh, chalky, and elegant on the nose, it opens up with crisp apple and citrus notes on the palate. Organically grown, vegan.
