The island of Santorini—a volcanic rock way out in the Aegean, with an extremely dry climate—can be a challenging place to grow fruit. Assyrtiko happens to be a grape that loves a challenge, and it produces astounding results in the right hands. Haridimos Hatzidakis and Konstantina Chryssou have perfected their craft since founding their winery in 1997. Using organic methods in the vineyard and the naturally cool conditions of their underground facility, they highlight the layered complexity assyrtiko is capable of. This ‘Santorini Familia’ cuvée ages for six months on the lees after fermentation with native yeasts and receives minimal sulfur at bottling. Briny and intensely mineral, like a sea fog rolling in over a rocky beach, this textural, age-worthy white shows in waves of citrus and orchard fruit. Left to breathe, it will continue to develop flavors of apple and spice on the finish. Organically grown, vegan.
