The Billiot vineyards date to 1896, when Eugene Billiot, a miller in the village of Ambonnay, purchased plots halfway up the slope above the village. A century and a quarter later, Ambonnay has become known as one of the finest sources for pinot noir-based Champagnes. Laetitia Billiot, representing the fifth generation of Billiot winegrowers, now manages 18 parcels, totalling 5 hectares, all within the Grand Cru area of Ambonnay. Fermentation takes place in steel tanks, and the wines are aged en tirage for 18-24 months. Bulliot’s wines do not undergo malolactic fermentation. The blend is 75% pinot noir, 25% chardonnay. For this rosé, a small portion of the pinot noir represented is red wine aged in oak. The result is a pure expression of Ambonnay.
