West of Meursault and Auxey-Duresses, in a valley that climbs up through the Côte d’Or escarpment, lies the village of Saint-Romain. Slightly cooler temperatures (than in villages lower down the slope) result in a longer growing season that has placed Saint-Romain in a good position for excellent vintages in recent years. The Buisson family’s history in Saint-Romain goes back to the twelfth century; brothers Franck and Frédérick Buisson carry on the winemaking legacy of their father (Gilles) and grandfather (Henri). Farmed organically since the 1970s, the family’s vineyards have been certified organic since 2009. Their “Sous la velle” (‘below the village’) parcel represents one of the estate’s two original vineyards, with vines currently 60 years old, on average. On a north-facing slope, with a high proportion of marl along with clay and limestone soils, Sous la velle produces a hearty, mineral-laden chardonnay. Fermented with indigenous yeasts in oak, this cuvée ages for 12 months in barrels of various sizes (of which 10% are new) and is lightly filtered before bottling. Deliciously dense aromas of lemon curd and marzipan, with just a touch of smoke, complement a textural palate, with minerality and citrus on the finish. Certified organic.
