J. Brix is owned and operated by native San Diegans Jody Brix Towe and his wife. Their passion for wine came after tasting a bottle of pinot noir from the Santa Maria Valley; they were so impressed they began volunteering as harvest interns in the Valley. They fell in love with the viticulture side and became horticulturalists with the dream of making their own stellar wines. They really love making small quantities of as many different wines as they can manage, because they love to experiment and see the different results of their work in the vineyards and winery. They only mature their wines in neutral vessels, ferment with native yeasts, only use low additions of sulfur dioxide when necessary, and bottle all of their wines unfined and unfiltered. The ‘Cobolorum’ is 100% riesling and the name translates to “goblin” in Latin, which is their affectionate nickname for their riesling vines. It is very lively with super energetic, frothy bubbles with tons of tropical fruit and green apple on the refreshingly dry palate. Organically grown, low-intervention/natural wine, vegan.
