This refreshing rosé has “summer” written all over it! Winemakers Benoit and François Moutard have decades of experience producing wine in Burgundy, where they cultivate not only beautiful vineyards but a hands-off approach in the cellar as well. That philosophy lends itself perfectly to redefining the 3L bag-in-box format, rescuing it from its former reputation of being a dumping ground for cheap, carelessly made wine. The fruit for this rosé comes from sustainably grown vineyards in the Costières de Nîmes, with vines averaging 30+ years in age. It is predominantly carignan picked specifically for rosé, which was fermented in stainless steel after a short amount of skin contact. The addition of a touch of grenache vinifed in the saignée method (the “bleeding” off of juice from a batch of red wine) adds depth and texture. After fermentation the wine was filtered, fined with bentonite (vegan), with judicious sulfur usage to preserve its natural character. In an eco-friendly container, this is oh-so-refreshing: tart cherry and watermelon flavors, aromas of sunkissed flowers and dusty seashells, and a crisp, dry finish with a spritz of sea spray all combine to evoke the perfect day at the beach.
